The adventure continued in Cabatuan, Iloilo, where we learned more about the local cacao and chocolate industry at Balay Tablea. This farm-to-table experience showed how locally grown cacao beans are turned into quality tablea products. We tasted rich hot chocolate, creamy tablea ice cream, and unique creations like white chocolate made from cacao butter, plus chocolate-infused tea and coffee. Watching cacao nibs being hand-rolled on a metate made this stop both educational and delicious.
Our last food stop brought us to Damires Hills in Janiuay, where good food met a relaxing view. Lunch at Balay Uma featured Kadyos Baboy Langka (KBL), a well-loved Ilonggo dish made with pork, pigeon peas, and jackfruit. Enjoying this hearty local meal surrounded by nature was the perfect way to end our tour—and a reminder of why Iloilo continues to shine as a true City of Gastronomy.
